Like usual, I saw this cool recipe on Pinterest. It was a version of sushi made with cucumber! It got me thinking about the lovely marriage of shrimp + avocado. The combo is dynamite and I can eat it so that's a win-win-win all around!! I found butter lettuce (finally! Why is that so scarce around here?) at Hy-vee and happily wrapped away, inspired by the ChowGals recipe. I suggest you do the same if you're on the hunt for deliciousness. ;)
Shrimp & Avocado Lettuce Wraps
Inspired by ChowGals
serves 1
20 small-medium shrimp, cooked and deveined
1/2 ripe avocado, mashed
1/4 cucumber, sliced into long thin slices
1 tsp. Sriracha sauce, plus more for drizzling
4 butter lettuce leaves
pepper to taste
Cut up shrimp into small pieces. Cut the avocado into small cubes and mash in a bowl until fairly smooth. Add in the shrimp and pepper to taste. Mix in the Sriracha sauce. Spoon into butter lettuce and fold each end over the other, sticking a toothpick in the center if you really want it to stay together. Or leave it unrolled and throw all formalities to the wind. Your pick! If you like the Sriracha sauce/spiciness, drizzle more on top of the filling before you roll. Enjoy!!
