Veggies...The Breakfast of Champs!

Hello, hello! Back to back days of blogging?? I must be ill ;) Or I'm just in a blogg-y (yes, that is a real word, I'm sure of it) mood! I was thinking about veggies and how much I love them, but that I know plenty of people who do NOT love them! Alas, here's another option to sneak some into your day nice and early; with breakfast! Kale is becoming all the rage these days, if you haven't already heard of the bennies (that's benefits in normal English), feel free to read about them here. Become a kale groupie and try out this recipe; see what you think!

Scrambled Egg + Veggies!
serves uno

tiny bit (maybe 1/2 - 1 tsp) of extra virgin olive oil
1 clove garlic, chopped into bitty pieces
1 slice onion, chopped into bitty pieces
3 mushrooms, sliced
leaves of 2 stalks of fresh kale, torn into small pieces
2 eggs (or egg whites if you're anti-yolk)
1/2 tomato, cut into small chunks
sprinkle of feta or goat cheese (i've used both and its delish with either!)
pepper
paprika

Splash a little olive oil in a small pan over medium heat, then add your garlic, onion and mushrooms to saute for a few minutes. Add your kale and cook until it turns a darker shade of green, like this

and becomes softer, about 4-5 minutes. Crack both eggs into the pan and cook, stirring frequently, until they are mixed in with the veggies. When the eggs are almost done (still only slightly gooey-looking), stir in the tomato and cheese and sprinkle with pepper and paprika to your liking. Serve it up and enjoy!

Nutrition (with 1/2 tsp olive oil): 220 calories, 12.5 g fat, 2.5 fiber, 110% Vitamin A, 126% Vitamin C, 510% Vitamin K, 13 g protein

Feel free to add extra veggies to this (chopped up asparagus would be yummy!) or substitute in your favorite kind of cheese if you'd like :) What meal is your downfall? Some people have a hard time not reaching for Pop-Tarts every morning; for others, it is saying no to the post-dinner cheesecake. Regardless of when you struggle to eat healthy, start your morning off right with something healthy, delicious and filling such as the above recipe :)

  1. Sounds good.....but the Pop Tarts sound pretty good also. But cheese popcorn before bed is the best :)
